Paul Cecconi’s extensive culinary career has landed him numerous awards and accolades, from the Okanagan “Iron Chef” in 2006, the Okanagan Chef’s Association “President’s Choice” award in 2008, to the title of Stone Soup Chef in 2010 and 2011, and the Vancouver Aquarium, Chowder “Chowdown” winner in 2011.

Paul credits his five and a half years working for the Vancouver Four Seasons Hotel where he learned not only how to stay organized in the kitchen and how to respect food, but to strive for excellence and to go above and beyond to what makes customers happy.

With Brodo Kitchen, Paul adds restaurateur to his list of titles.  Opening in May 2013, Brodo has carved out a unique niche in downtown Penticton.  Drawing inspiration from the abundance of the Okanagan valley. Brodo’s menu features soups, sandwiches and salads with seasonal ingredients from local orchards, farms and vineyards.  “Keeping it simple” is Paul’s approach to cooking and this is exemplified at Brodo, where the menu evolves seasonally and fresh sheets are constantly changing.paul

As a director for the Kelowna branch of the Canadian Culinary Federation and a member of the Chaine de Rotisseurs, Paul spends his spare time mentoring young chefs where he imparts advice to aspiring young chefs to “think about what you want to do”, “not overcomplicate things” and “to deliver a consistent and excellent product.”

When asked about his proudest accomplishment in his culinary career, Paul is unable to pinpoint just one event but cites his entire journey as a chef and where that journey may yet lead him in the future, as his proudest achievement.  Already, Paul has been looking to expand the catering side of his business, which catered the inaugural Challenge Penticton event this year.  With Brodo’s continued success, a second location or fine-dining concept could be in the works.
